It depends if the set is faction wide. I mean, if it changes after you change faction. You can see that when you search the set in wowhead.com As for example http://i.imgur.com/NWU9eRY.png There's many items that isn't faction wide. So you can check if the set is faction wide or not. If not, the set will not change it's apperance.

After you mogged your items, put them in bag and equip them. Then relog. And they will stay tmogged.
